If there is a benchmark for just what late-disgorged Australian sparkling can be, this is it. Disgorged in June 2011 after a monumental fifteen years on lees (no standard release champagne can claim this), complexity and richness go without saying, but (and this is a big but, for this is rarely ever achieved outside champagne) elegance, softness and silkiness are upheld. Layers of roast almonds, brioche, wild honey, burnt butter, even wisps of smoke, nuances of hearth and hints of game bring great allure to its poached pear and grilled peach fruit.
