A pretty bouquet of lifted apple blossom introduces a palate that walks a knife-edge of ripeness. Pronounced, searing acidity is offset cleverly with a touch of fruit sweetness, without deviating from the perfect ripeness of lime and granny smith apple fruit. An impressively fine St Andrews, with a steely, mineral backbone that calls for at least five years in the cellar. $28 at Cracka.
